How We Started

The story of Bakersfield Bakehouse begins with a simple idea: that good bread doesn't need to be complicated. In a small rented kitchen, we mixed flour, water, and patience, slowly developing techniques that honored traditional methods. Over time, the operation outgrew the space. We moved to a storefront on Chester Avenue, expanded our equipment, and invited more hands to help. What remained constant was the focus on process—meticulous fermentation, careful shaping, and respect for each ingredient. The bakery grew not by chasing trends, but by listening to what the community valued: honest bread made with care.

The Philosophy Behind the Dough

Our approach is shaped by a belief that baking is a series of small decisions. Temperature, timing, and technique all play a role. We do not claim one recipe is better than another; we simply document our methods and let the results speak for themselves. Early on, we learned that consistency comes from understanding variables, not from rigid rules. That mindset remains central to how we operate today.

The Steps That Shaped Us

  • 01

    Experimenting at Home

Testing flours, hydration levels, and fermentation times on a residential stove.

  • 02

    Finding a Commercial Kitchen

Renting shared space to scale up batches and refine production workflows.

  • 03

    Opening the Storefront

Setting up a dedicated bakery with proper ovens, mixers, and a retail counter.

  • 04

    Growing with the Community

Expanding offerings based on feedback while maintaining core baking practices.

Where We Are Now

Today, Bakersfield Bakehouse operates from a full bakery on 24th Street. The space is larger, but the approach remains the same. We continue to bake in small batches, using the same techniques we developed in that early kitchen. Our team focuses on process documentation and continuous learning. The journey is ongoing, and we invite you to be part of it.
